Tuscan panzanella or smoked goose breast with juniper scented grilled peaches and dressed endive are the perfect dishes with which to open the menu à la carte, which closes with Siena’s legendary cantucci, panforte and panpepato.
Among the first courses we find pici alla Aglione, ricotta and spinach filled Maremmani topped with hare ragout in civet, and creamed barley with pleus mushrooms and Pienza pecorino cheese.
Then there are the flavor-packed meat dishes: prime cut of beef with hint of rosemary and Tuscan slow-baked beans, duck breast cooked in orange and herbs from the Borgo served on a nest of Chianti braised onions, and carré of honey glazed suckling pig with apple and Vernaccia sauce.
The comprehensive wine list includes an ever increasing number of promising new wines, such as Montecucco Camporombolo, Montereggio Riserva, Morellino di Scansano Vivius, and the Nipozzano Riserva, in addition to the great Tuscan labels such as Sassicaia, Tignanello, Cabrero, Brunello do Montalcino, Nobile di Montepulciano, and Chianti.
